“I went to the woods because I wished to live deliberately,” Thoreau wrote, “to front only the essential facts of life, and see if I could not learn what it had to teach, and not, when I came to die, discover that I had not lived … I wanted to live deep and suck out all the marrow of life.”
“Tuetano de res” is beef bone marrow in Spanish and nowhere is it better than at El Almacen in Guadalajara. Marco found a table to watch the endless parade of beautifully dressed affluent summer clad Guadalajaran women with mall donkey companions strutting down the fanciest street in town. An hour later there would be a line. Not cheap but not unreasonable. The bone marrow served in the bone with chunks of pan fried rib eye, fresh Serrano chile and salsa fresca. Flour tortillas have a higher fat content than corn but when you are in hell you’ve got to dance with the devil.  The aged ribeye didn’t suck either.
The steak knives were to die for.  Part knife part clever. They didn’t want to let them go.  But we got the set.  The perks of being a ‘meat blogger.’. It was technically a business lunch.  We closed the deal. 6 steak knives. Don’t leave before the miracle, live deep and suck the marrow of life.
